A Fall Favorite of my entire family is Libby's Pumpkin Roll. I only alter the recipe by not adding walnuts. Every year I make several for friends and family..last year I think I made 12! Its really not that difficult and I have yet to find someone who doesn't like it. So here's the link...

Oh my gosh, drool! I love the Libby's pumpkin roll. Like you, I make so many every fall. I like mine with out walnuts too, but I usually make most of them with, as people tend to love those. I could eat them all year around but pumpkin can be hard to find. I may have stored some away for early this fall in case it's as hard to find this year as it was last year. :)
